Can Shar Pei who have had their ear cs removed still hear?

Dogs don't hear with their ear cs. They hear with their tympanic membranes (the "ear drum). However, the surgery that your dog went through most likely did some damage to the tympanic membranes as well and she will have at least some hearing loss if not total deafness. If she has some amount of hearing now, she probably will have some amount of hearing long-term. Even if she does have some hearing loss you probably won't notice much. Dogs with chronic ear infections bad enough to warrant this kind of surgery usually have a lot of hearing loss anyway before the surgery.
